2 C Apple cider vinegar
3/4 C sugar or honey
1 t Salt
1 stick cinnamon, broken
1/2 t fengreek
1/2 t mustard seed
1/2 t coriander
1/4 t cumin
1 T ginger, chopped
1 clove garlic, chopped
1-2 small chiles
1/2 shallot, sliced
1 lb carrots, quartered
Place the vinegar, sugar and salt in a non-reactive pan. Bring to a boil. Reduce to a simmer and add your spices. Simmer for 5 mins. Place ginger, garlic, chiles, and shallots in your jars. Add you carrots. This is easiest if you hold the jar on its side. Add the vinegar spice mixture until you have 1/2" of headroom. Process for 25 mins. Allow to sit for at least a month.

ReplyDeleteCarrots are so conductive to pickling. There are so many different flavors you can do. I have yet to have a pickled carrot that didn't taste good.

ReplyDeleteRe: spices: all those spices should be available in local supermarkets that have bulk spices. To name a few: PCC, Central Market, Greenwood/Ballard Market, Whole Foods. Funugreek is the only one I have had problems finding, but at least 2 of those stores carry it now. Buying bulk spices is cheaper because you use less packaging and only buy the amount you need.
The only investment is in spice jars, but reusing old ones works very well....that said, I have ordered/been given spices from mail order sources at times...!
